Paya Recipe
Ingredients
Mutton/Beef/Lamb trotters/hoof (Paya) | 6-8 pcs | |
Ginger garlic paste | 2 tbsp | |
Onions | 250 gms (chopped) | |
Water | for boiling | |
Coriander powder | 1 tsp | |
Red chili powder | 3-4 tsp | |
Turmeric powder | 1/2 tsp | |
Salt | To taste | |
Brown Onions | 1/2 cup (crushed) | |
Whole spice powder (Garam masala) | 1/2 tsp | |
Oil | 1/2 cup | |
Coriander leaves | To garnish (chopped) | |
Green chilies | To garnish (chopped) | |
Lemon | To garnish | |
Ginger | To garnish (Julienne cut) |
Method:
- Wash the Mutton/Beef/Lamb trotters/hoof (Paya) properly.
- In a big pan add water, trotters/hoof, ginger garlic paste and chopped onions. Let it boil till it tenders.
- To prepare curry, heat oil in another pan, and add ginger garlic paste, coriander powder, red chili powder, turmeric powder and salt. Fry the mixture very well.
- Then add crushed brown onions to the curry mixture along with 2-3 tbsp water, and stir well.
- Add boiled trotters/hoof to the curry mixture, and stir well.
- Pour left over trotters/hoof stock slowly in the curry mixture, cover the pan and let it cook on low heat, until the trotters/hoof tenders.
- In the end add whole spice powder (Garam-masala) and turn off the flame.
- Dish out in a big platter and garnish with ginger, coriander leaves, lemon slices and green chilies. Serve with hot Naan.
